When a grocery store develops a smell, the grate people step over without looking is a reasonable place to start. Drain odor is easy to misread, because the thing producing it is small, fixed and out of sight while the smell itself travels the whole building. Here is how to trace a store odor back to the drain causing it, and how to rule the drains out when the problem is somewhere else.
The smell moves, the drain does not
A drain odor reads as a whole-store problem because the gas moves and the drain stays put. Air in a supermarket is pushed around constantly by refrigerated case fans, exhaust hoods, vestibule doors and the rooftop units, so odor from a single grate in a wet department can register several aisles away and register faintly when you are standing directly over it. Walking the sales floor hunting for the strongest spot follows the airflow, not the source.
Winter narrows the odds further in this part of the country. Doors stay shut, the outside air brought in for ventilation gets minimized because heating it costs money, and the same air recirculates through the building all night. A drain that drew no complaints in warm weather can become noticeable once the heating season is underway, with nothing about the drain itself having changed. Heated air is also dry air, and dry air pulls water out of any trap that is not being topped up, which is a second reason odor calls cluster in the cold months.
What is actually growing under the grate
The material behind the smell is biofilm, not loose dirt. Food solids, fats, sugars and constant moisture feed a bacterial colony that builds its own protective matrix and anchors itself to the vertical walls of the drain throat, to the underside of the grate, and to the lip where the grate seats into the floor. That matrix is what makes biofilm stubborn. It is slimy, it grips, and it shrugs off a rinse that would carry ordinary soil away without complaint.
Deeper in the layer, oxygen runs out. Bacteria working in that oxygen-starved zone give off volatile sulfur compounds, which is why people describe drain odor as sewer, rotten egg or sour rather than as dirt. A dry trap is not a dirty drain
Two different faults show up at the same grate and call for opposite responses. Biofilm is a residue problem and it clears with scrubbing. A trap that has run dry is a plumbing condition and it clears with water, as the service page above explains.
What matters on the floor is telling the two apart, because scrubbing an empty trap achieves nothing and pouring water at biofilm achieves nothing. A dry-trap smell tends to be sulfurous and steady, it turns up in rooms where very little happens, and there is no visible mess to find when you get there. A biofilm smell carries a sour, food-spoilage character, sits near a working department, and returns on an interval after each cleaning. Clean water settles the question: if the smell quiets within a shift, it was the seal.
Deli, produce and meat drains fail in different ways
They collect different soil, so they fail differently and they need different attention.
Deli, bakery and prepared-food drains take fats, oils, proteins, flour and sugar. Fat is the operative problem. It goes down warm from equipment cleaning or hot mop water, then cools and sets on the drain walls and inside the trap, building a surface that catches whatever arrives behind it. Degreasing with enough dwell time to break the fat, rather than warm water that only softens it, is the difference between removing that layer and thickening it.
Produce drains take plant fiber, trimmings, soil off root vegetables and a steady flow of water from misted displays. They rarely grease over. They plug. A strainer basket fills with fiber, water backs up and stands on the floor around the display base, and what develops is the sour, fermenting note of wet produce debris rather than a sewer note. If the floor around a produce drain is still wet at the start of a shift, the drain is already telling you something.
Meat and seafood drains are cold, wet and protein heavy, and nothing in that environment dries between shifts. Protein residue left in a drain body has time to spoil on its own schedule, and the cold slows that process down rather than stopping it, so a drain on the meat side can read as mild for days and then turn sharply.
How do you tell a drain problem from a cooler or a compactor problem?
By timing and behavior rather than by location. Odor sources in a grocery building behave differently enough to separate with nothing but a nose and a few minutes, provided you ask when the smell appears and what makes it change instead of where it is loudest.

When the drains are clean and the smell is still there
Then the smell is coming off the floor plane rather than out of it. Grout lines that have worn open and started absorbing, and a floor finish that has gone porous and no longer releases soil, are surface conditions rather than sanitation ones. There is a quick way to test for that before anyone gets called. If the odor is broad and low rather than pinned to a fixture, if it follows the traffic lanes, and if it improves briefly after a scrub and then returns as the floor dries, the floor is holding it and the drains are innocent.
